Abstract The present invention relates to novel synergistic compositions comprising known ¨clean­label¨ antimicrobial substances as well as processes for stabilizing food substances against typical food borne spoilage microorganisms and/or pathogens. It is a further object of the invention to provide novel combination of ¨clean label¨ antimicrobials which may be employed in such a process. La présente invention concerne de nouvelles compositions synergiques comprenant des substances antimicrobiennes connues selon la démarche "Clean Label", ainsi que des procédés de stabilisation de substances alimentaires contre des micro-organismes et/ou des pathogènes typiques de l'altération d'origine alimentaire. Un autre objet de l'invention est de fournir une nouvelle combinaison d'antimicrobiens selon la démarche "Clean Label" qui peut être utilisée dans un tel procédé.
