Summary:The present invention relates to an enzyme composition that has hydrolytic activity on polysaccharides present in malt and also to a method for malt mashing for manufacturing drinks, especially beers, involving incubation thereof with said enzyme composition. La présente invention concerne une composition enzymatique possédant une activité hydrolytique sur les polysaccharides présents dans le malt, ainsi qu'un procédé de brassage du malt pour la fabrication de boissons, notamment de bières, par incubation avec ladite composition enzymatique. A presente invenção trata-se de uma composição enzimática que possui atividade hidrolítica sobre os polissacarídeos presentes no malte e, ainda, a um método de mosturação do malte para a fabricação de bebidas, em especial cervejas, envolvendo a incubação do mesmo com dita composição enzimática.
