Abstract Particles of a calcium salt having a median particle diameter of less than 100 μm have been found to enhance the taste of food products, including confectionery products. Sensory testing within tasting panels is described in relation to chocolate products. Selon la présente invention, on a découvert que des particules d'un sel de calcium présentant un diamètre de particule moyen inférieur à 100 µm améliorent le goût de produits alimentaires, y compris de produits de confiserie. L'invention concerne une analyse sensorielle par des jurys de dégustation relative à des produits au chocolat.
