Abstract A method of separating a protein characterized in that the protein adsorbed by a clay mineral composition is separated by using one or more members selected from a group consisting of fatty acid esters having 30 or less carbon atoms in the fatty acid residue. According to this method, a target protein can be conveniently and economically obtained in a large amount on an industrial scale at a high efficiency without deteriorating its functions for example, lowering the enzymatic activity. Thus, the protein can be concentrated and purified. L'invention concerne un procédé de séparation d'une protéine caractérisé en ce que la protéine adsorbée par une composition minérale d'argile est séparée à l'aide d'un ou plusieurs éléments choisis dans le groupe des esters d'acides gras comportant au plus 30 atomes de carbone dans le résidu d'acide gras. Selon l'invention, il est possible d'obtenir de façon simple et économique une protéine cible dans une quantité importante, à l'échelle industrielle, avec un rendement élevé, tout en conservant les propriétés de ladite protéine (par ex. réduction de l'activité enzymatique). Par conséquent, ladite protéine peut être concentrée et purifiée.
