The present application provides a method for producing pigment, comprising culturing Lactobacillus brevis or Lactobacillus casei in a culture medium including gardenia extract for fermentation to generate a fermented culture medium, so as to produce a yellow pigment, a green pigment, a blue pigment or a combination thereof. Taking the advantage of the present method, natural pigments with various colors can be produced and added to the food directly without additional steps of purifying or extracting.
