Summary: | The invention provides a method and apparatus for the continuous preparation of a puffed grain product, in particular an instant puffed rice flake product. The invention provides a method comprising the steps of soaking grains in water, pre-cooking the grains, exposing the grains to a first drying step, processing the grains into flakes and, optionally, exposing the puffed grain flakes to a second drying step.
