Abstract FIELD: canning industry.SUBSTANCE: method for production of apple compote is characterized by the fact that fruits laid in a jar are heated by cyclic injection of saturated water vapor with a temperature increasing for cycle by 10 °C for 72 s. After that, syrup is poured, sealed and sterilized in autoclave according to a certain mode.EFFECT: invention allows to reduce sterilization duration, reduce non-uniformity of heat treatment, as well as heat energy saving and finished products quality enhancement.1 cl, 1 ex Изобретение относится к консервной промышленности. Способ производства компота из яблок характеризуется тем, что плоды, уложенные в банку, подвергают подогреву циклическим вдуванием насыщенного водяного пара с повышающейся от цикла к циклу на 10°С температурой в течение 72 с. После этого заливают сиропом, герметизируют и стерилизуют в автоклаве по определенному режиму. Изобретение позволяет уменьшить продолжительность стерилизации, снизить неравномерность тепловой обработки, а также экономию тепловой энергии и повышение качества готовой продукции. 1 пр.
