Abstract The invention relates to a process for preparing cellulose and dextran biopolymers from biofilms of yeast and bacteria symbiotic consotia. According to the invention, the process consists of the following stages: preparing culture media for Kombucha or water kefir and an infusion of green or black tea suspension in water sweetened with sugar, to which a lemon slice is added, inoculating the media with sweetened infusion with Kombucha film culture/biofilm or water kefir granules/biofilm, adding polyphenol extract in an aqueous solution of ethanol 25%, with antioxidant activity, expressed as IC50 of 2 mg/ml, cultivating Kombucha or water kefir consortium, for 10 days or 3 days at a temperature of 21...25°C, aseptically harvesting the Kombucha film/ biofilm/kefir granule, taking 2/3 of the biofilm quantity for processing in order to obtain polymers, cellulose or dextran, and using the biofilm remainder for resuming the production cycle. Invenţia se refră la un procedeu de obţinere a biopolimerilor celuloză şi dextran din biofilmele unor consorţii simbiotice de drojdii şi bacterii. Procedeul, conform invenţiei, constă în etapele: preparare a mediilor de cultură pentru Komucha sau kefir-de-apă, respectiv, a unei infuzii de suspensii de ceai verde sau negru în apă, îndulcită cu zahăr, la care se adaugă o felie de lâmâie, inocularea mediilor cu infuzie îndulcită cu biofilm/peliculă de cultură de Kombucha sau biofilm/granule de kefir în apă, adăugarea unui extract de polifenoli într-o soluţie apoasă de etanol 25%, având activitate antioxidantă, exprimată ca IC50 de 2 mg/ml, cultivarea consorţiului Kombucha sau kefir-de-apă, timp de 10 zile sau 3 zile la temperatura de 21...25°C, recoltarea aseptică a biofilmului/peliculei de Kombucha/granulei de kefir, prelevarea a 2/3 din cantitatea de biofilm pentru prelucrare în vederea obţinerii biopolimerilor, celuloză sau dextran şi utilizarea restului de biofilm pentru reluarea ciclului de producţie
