The invention relates to a polysaccharide-rich composition comprising beta-glucan, chitin and chitosan extracted from the cell wall of Saccharomyces cerevisiae from biomass by-product resulting from a beer production method. The invention also relates to the method for obtaining same and to the uses thereof. Among other biofunctions, the composition has a selective fat binding effect which makes it suitable for use in the prevention and/or treatment of diseases, such as overweight, obesity, hypercholesterolemia, hypertriglyceridemia, hypertension and cardiovascular disorders. The composition can be formulated as an edible, pharmaceutical or veterinary product. La presente invención proporciona una composición rica en polisacáridos que comprende beta-glucano, quitina y quitosano, extraídos de la pared celular de Saccharomyces cerevisiae a partir de biomasa subproducto resultante de un procedimiento de elaboración de la cerveza, el procedimiento para su obtención y sus usos. La composición presenta, entre otras biofuncionalidades, un efecto ligando de grasa selectivo por lo que es útil en la prevención y/o tratamiento de enfermedades como el sobrepeso, la obesidad, la hipercolesterolemia, hipertrigliceridemia, hipertensión arterial y trastornos cardiovasculares. Se puede formular como producto comestible, farmacéutico o veterinario.
