Abstract | The present invention relates to a producing method of green tea ripening half-dried billfish which ripens fish for half-dried billfish in a ripening liquid made by mixing a green tea extract with protease to produce half-dried billfish, thereby producing half-dried billfish with enhanced product properties. The half-dried billfish produced by the producing method of the present invention significantly lowers fishy and miscellaneous odors, enhances a flavor, and lowers rancidity to enhance storage properties. In addition, the half-dried billfish of high quality contains catechin, which is an active ingredient of green tea.
본 발명은 녹차숙성 과메기의 제조방법에 관한 것으로 녹차추출물과 프로테아제를 혼합하여 제조한 숙성액에 과메기용 생선을 숙성하여 과메기를 제조함으로 제품성이 향상된 과메기를 제조하는 것이다. 본 발명의 제조방법으로 생산된 과메기는 비린내 및 잡냄새가 현저하게 저하되고 풍미가 향상되며 산패가 저하되어 저장성이 향상된다, 또한 녹차의 유효성분인 카테킨이 함유된 고품질의 과메기이다. |
