Summary:The present invention relates to a Rhizopus stolonifer strain separated from microorganism fermented tea. In particular, the present invention relates to the following: a Rhizopus stolonifer strain, which is separated from microorganism fermented tea and can apply functionalities, especially anti-diabetic and anti-obesity activities and fatty liver inhibiting functions to the fermented tea produced by being fermented with a strain; a biocatalyst for producing microorganism fermented tea including one or more selected from the group consisting of the Rhizopus stolonifer strain separated from microorganism tea, a culture medium liquid of the strain, and a concentrated liquid from the culture medium liquid; and a method for producing microorganism fermented tea comprising a step of making a biocatalyst for producing the microorganism fermented tea in reaction with tea tree leaves. Compared to reported existing microorganisms separated from microorganism fermented tea, the novel Rhizopus stolonifer strain separated by the present invention has various functionalities, particularly improved anti-diabetic and anti-obesity activities and excellent anti-obesity activities, so as to be used in producing high quality microorganism fermented tea.
