PURPOSE: Provided are a method for separating an antibacterial matter from Chinese artichoke and an antibacterial composition containing the antibacterial matter as an active ingredient. The composition is useful as functional foods or food additives. CONSTITUTION: A method for separating an antibacterial matter from Chinese artichoke comprises the steps of: preparing EtOH extract of Chinese artichoke; adding 8-12 part by weight of hexane, 8-12 part by weight of water to 1 part by weight of the EtOH extract and concentrating the hexane fraction; suspending the hexane fraction with a mixed solution of 0.1-2 part by weight of chloroform, 0.5-3 part by weight of ethanol and 6 part by weight of hexane and purifying it with silica gel column; suspending the purified fraction having antibacterial activity with a mixed solution of 0.1-2 part by weight of ethylacetate, 2-5 part by weight of chloroform, 0.5-2 part by weight of methanol, 0.1-1 part by weight of acetic acid and 10 part by weight of hexane, and eluting it with silica gel column; and purifying the eluate. 본 발명은 초석잠 유래의 항균활성 물질의 분리방법 및 상기 항균활성 물질을 유효성분으로 함유하는 항균활성 조성물에 관한 것으로서, 상기 항균활성 물질은 병원성 세균에 대해 뛰어난 항균활성을 가지며, 40 내지 180℃에서 30분간 열처리에 안정성을 가지고, pH 4 내지 10에서도 안정성을 가지므로, 상기 항균활성 물질을 유효성분으로 함유하는 항균활성 조성물은 의약용 항균제, 항균효과를 가지는 기능성 식품 또는 식품 첨가물로 널리 이용될 수 있다.
