Abstract | To provide a hard butter composition substantially free of trans-form unsaturated fatty acid and laurate.SOLUTION: The present invention provides a non-temper hard butter composition that satisfies all of following conditions (1)-(3) and has a low trans fatty acid content. (1) The mass ratio (St/P) of stearate and palmitate in the constituent fatty acid composition is 0.8-1.5. (2) The content (SSU/S2U) of SSU triglyceride (1,2-disaturated-3-monounsaturated triglyceride) in S2U triglyceride (disaturated monounsaturated triglyceride) is 0.5-0.8. (3) The content of triglyceride with a partition number (PN) of 50-54 is 45-60 mass%.SELECTED DRAWING: None
