To efficiently cut a cut object 7 like a strawberry-containing cake where a second cut object 7b having different hardness is mixed into a first cut object 7a.SOLUTION: An ultrasonic cutter device is configured such that: a handle part is projected onto a flat surface on which an edge of a cutter vibrates, outside a housing to be attached to an ultrasonic vibrator connected with the cutter in which a dull part without an edge is formed if necessary, at an end part of the edge; a pressure-receiving part for receiving external force in a direction crossing a length direction of the edge of the cutter is provided on the surface of the handle part, at a position separated only by a prescribed distance from the center in the length direction of the edge of the cutter, and within a range in the length direction of the edge including the dull part without the edge of the cutter; and when external force is applied to the pressure-receiving part, the edge of the cutter is inclined on the flat surface where the edge of the cutter vibrates, by the couple of force of reaction force received from the surface of the cut object and external force, and cuts the cut object while changing a position hitting on the surface of the cut object and a contact angle.SELECTED DRAWING: Figure 1 【課題】苺入りケーキのように、第一の被切断物７ａ中に硬さの異なる第二の被切断物７ｂが混在している被切断物７を効率よく切断する。【解決手段】必要により刃先の端の部分に刃の無い鈍部を形成したカッターを接続した超音波振動子に取り付けるハウジングの外側には、カッターの刃先が振動する平面上にハンドル部を突出させ、当該ハンドル部の表面には、カッターの刃先の長さ方向の中央から所定距離だけ離れた位置で、かつ、カッターの刃の無い鈍部を含む刃先の長さ方向の範囲内で、カッターの刃先の長さ方向と交差する方向の外力を受ける受圧部を設け、受圧部に外力を加えたとき、カッターの刃先が、被切断物の表面から受ける反力と外力による偶力で、カッターの刃先が振動する平面上で傾いて当該刃先が被切断物の表面に当たる位置と当接角度を変えながら被切断物を切断するようにした超音波カッター装置。【選択図】図１
