PROBLEM TO BE SOLVED: To provide ethanol production methods by which ethanol distillation using fermented unrefined sake can be efficiently performed.SOLUTION: The ethanol production method of the present invention comprises an initial charging step of charging, into a distillation bath (21), a fermented unrefined sake obtained by the saccharification and fermentation reaction of the biomass in a reaction vessel (10), a distillation step of distilling ethanol from the fermented unrefined sake in the distillation bath (21), and an intermediary charging step of charging a novel fermented unrefined sake into the distillation bath (21) in a step on the way of the distillation step.SELECTED DRAWING: Figure 1 【課題】発酵醪を用いたエタノール蒸留を効率的に行えるエタノール製造方法を提供する。【解決手段】本発明のエタノール製造方法は、バイオマスを反応槽（１０）において糖化および発酵反応させることによって得られた発酵醪を蒸留槽（２１）へ投入する初期投入工程と、蒸留槽（２１）内において発酵醪からエタノールを蒸留する蒸留工程と、蒸留工程の途中段階において新たな発酵醪を蒸留槽（２１）へ投入する中間投入工程とを含んでいる。【選択図】図１
