Abstract | PROBLEM TO BE SOLVED: To provide a defoaming agent composition for food easy to handle with low viscosity during foaming in a manufacturing process of the food, capable of favourably dispersing resin in an addition system and capable of providing excellent defoaming performance and the food containing the same.SOLUTION: For solving an above described problem, there are provided a defoaming agent composition for food containing each component of following (A) to (C); (A) lecithin, (B) sorbitan tri fatty acid ester of sorbitan and unsaturated fatty acid having 18 carbon atoms and (C) sorbitan mono fatty acid ester of sorbitan and unsaturated fatty acid having 18 carbon atoms with (A) of 5.0 to 25.0 mass%, (B) of 40.0 to 94.9 mass% and (C) of 0.1 to 35.0 mass% and food containing the same.SELECTED DRAWING: None
【課題】本発明の課題は、食品の製造工程における発泡に際し、取り扱いが容易な低粘度なものであり、レシチンを添加系内で良好に分散させることができ、優れた消泡性能が得られる食品用消泡剤組成物およびこれを含有する食品を提供することである。【解決手段】上記課題を解決するために、下記の(A)〜(C);(A)レシチン(B)ソルビタンと炭素数18の不飽和脂肪酸とのソルビタントリ脂肪酸エステル(C)ソルビタンと炭素数18の不飽和脂肪酸とのソルビタンモノ脂肪酸エステルの各成分を含有し、(A)が5.0〜25.0質量%、(B)が40.0〜94.9質量%、および(C)が0.1〜35.0質量%である食品用消泡剤組成物およびこれを含有する食品を提供する。【選択図】なし |
