Abstract PROBLEM TO BE SOLVED: To provide heating cooking device performing cooking by blowing hot blast to a heated object, which can perform cooking at an arbitrary temperature while suppressing energy consumption, and can suppress deterioration of finishing of the heated object due to steam, evaporated fat or the like.SOLUTION: A heating cooking device A includes: a bottom box-shaped container 2 storing a heated object; an outflow passage 114 (116) flowing out at least part of hot blast to the outside; exhaust adjustment means 6 adjusting an outflow amount of hot blast passing through the outflow passage 114 (116); and control means 91 controlling the exhaust adjustment means 6. The heating cooking device A controls the exhaust adjustment means 6 so as to become the outflow amount of hot blast so that the state at the time of heating satisfies a predetermined condition. 【課題】熱風を被加熱物に吹き付けて調理を行う加熱調理装置であって、エネルギの消費を抑えつつ任意の温度で調理することができるとともに、水蒸気や蒸発した油脂分等による前記被加熱物の仕上がりの悪化を抑制できる加熱調理装置を提供する。【解決手段】被加熱物を収容する有底箱形状の容器2と、熱風の少なくとも一部を外部に流出させる流出路114(116)と、流出路114(116)を通過する熱風の流出量を調整する排気調整手段6と、排気調整手段6を制御する制御手段91とを備え、加熱処理時の状態が所定の条件に収まるような前記熱風の流出量となるよう、排気調整手段6を制御する加熱調理装置A。【選択図】図1
