Summary: | PROBLEM TO BE SOLVED: To provide a method for improving the conversion rate of a fat-soluble unsaturated lipid into a water-soluble lipid. SOLUTION: This method for improving the conversion rate of the fat-soluble unsaturated lipid into the water-soluble lipid comprises using pyridine thionyl chloride as a catalyst to form an unsaturated lipid chloride derivative having increased reaction activity without directly reacting the unsaturated lipid with an amino acid, or reacting the unsaturated lipid with the amino acid in the presence of an emulsifier, thereby micronizing the particle size of the lipid into highly fine nanoparticle size (≤50 nm).
