PROBLEM TO BE SOLVED: To provide a splitting machine with which adjustment of split dough mass depending upon the technique and experience of an operator is automatically and accurately carried out. SOLUTION: The splitting machine has a mass weighing apparatus 46 for weighing dough mass discharged from a pocket, a calculation means having a specific gravity calculation means 62 for calculating the specific gravity of the dough based on the mass value of the dough (d) weighed by the mass weighing means and the volume (namely the volume of the dough) of a dough packed space in the pocket, a volume calculation means 64 for calculating the volume in the dough packed space in the pocket required for preparing the dough discharged from the pocket as a target mass based on the calculated specific gravity and a retreat position calculation means 66 for calculating the retreat prevention position by the stopper of a ram required for preparing the dough packed space in the pocket as the calculated volume based on the calculated volume and a stopper position adjustment means 36 for adjusting the position of the stopper based on the retreat prevention position calculated by the retreat position calculation means.
