Abstract | A pregelatinised inhibited particulate starch product having a solubles-corrected sedimentation volume of 15-80 mL/g comprises a plurality of particles of which ≥50% are hollow. Typically, the hollow particles have an inner void ≥20% of the particle volume. The plurality of particles may have an aspect ratio of ≤3. Preferably, the starch product comprises maize or tapioca starch and may be thermally inhibited or chemically inhibited by crosslinking with acrolein, phosphate, adipate, or epichlorohydrin. A method of making a pregelatinised inhibited particulate starch product having a solubles-corrected sedimentation volume of 15-80 mL/g comprises providing an aqueous dispersion of gelatinised starch and blowing agent, spray-drying the dispersion to activate the blowing agent, and heating a resulting spray-dried particulate to inhibit the starch. The blowing agent may be ammonium or sodium bicarbonate or carbon dioxide. The dispersion may further comprise a crosslinking agent. A foodstuff comprising the starch product is also claimed. |
