Abstract Hydroxytyrosol ethers. The invention relates to hydroxytyrosol ethers derived from fatty alcohols and phenolic compounds of olive oil and the salts, solvates and hydrates thereof, which have an affinity for type 1 cannabinoid receptors (CB 1 ) and which can: prevent the oxidation of low-density lipoprotein (LDL) and modulate the actions regulated by said receptor, such as inducing satiety, controlling intake and reducing body fat. Éteres de hidroxitirosol derivados de alcoholes grasos y compuestos fenólicos del aceite de oliva y sus sales, solvatos e hidratos, que muestran afinidad por receptores cannabinoides tipo 1 (CB1) y son capaces de prevenir la oxidación de la Lipoproteína de Baja Densidad (LDL) y de modular las acciones reguladas por el citado receptor, tales como la inducción de la saciedad, el control de ingesta y la disminución de la grasa corporal.
