Abstract | According to the minced euphausia superba crisp chips and the preparation method thereof, minced euphausia superba, corn starch and wheat flour are taken as main raw materials, baking soda and table salt are taken as auxiliary materials, and by optimizing a product formula and process conditions, the problems that euphausia superba is prone to degradation of euphausia superba myofibrillar protein and gel formation is hindered are solved; the gel property of the product is improved, crisp leisure food meeting the requirements of consumers is obtained, and the method has important significance on promoting development and utilization of krill resources.
