Abstract | The invention relates to the technical field of coffee extraction, in particular to a coffee extraction technology based on a harmless refrigerant low-temperature wall breaking technology. The coffee extraction technology specifically comprises the following steps: S1, drying treatment; S2, pretreatment; S3, low-temperature wall breaking and crushing; S4, coffee powder baking; and S5, coffee extraction. According to the coffee extraction technology, green coffee beans are crushed by adopting a harmless refrigerant (liquid nitrogen) low-temperature wall breaking technology to obtain green coffee bean powder, and then the green coffee powder is baked and extracted, so that coffee essence substances can be reserved to the maximum extent, foreign flavor and peculiar smell generated by splitting decomposition are reduced, the coffee extract and the coffee product thereof are rich and full in fragrance, mellow and clean in taste, soft in bitter taste and sweet in aftertaste.
