Abstract | The invention discloses a fume collection type cold and heat exchange cold and heat storage system for a cafeteria. The system comprises a heat pump, a cold accumulator, a heat accumulator, a cold storage device and heat supply kitchen ware equipment. The cold end of the heat pump is connected with the cold storage device through the cold accumulator, the hot end of the heat pump is connected with the heat supply kitchen ware equipment through the heat accumulator, a fume collection device is arranged above the heat supply kitchen ware equipment, and the fume collection device is connected with the heat accumulator through a fume screening-out device and a waste heat recoverer in sequence. By means of the heat pump, energy consumption is moderately reduced, and because fume waste heat recovery is adopted, the heat supply capacity of the system is improved, pollution caused to the environment is reduced, meanwhile, electric power consumption is reduced, the efficiency is high, cold and heat can be better utili |
