Abstract | The invention provides a making method of dried lemon slices and a product made by using the making method, and belongs to the technical field of processing of dry fruit and vegetable slices. The making method of the dried lemon slices comprises the following steps that 1, lemon slices are subjected to hot air drying for preprocessing to obtain pre-dried lemon slices; 2, the pre-dried lemon slicesare infiltrated and dewatered in penetrating fluid to obtain dewatered lemon slices; 3, the dewatered lemon slices are subjected to freeze drying to obtain the dried lemon slices. By comprehensivelycomparing the sensory index, the nutritive index, the textural properties and the total freeze drying time of the lemon slices, compared with the lemon slices made through infiltration dewatering andfreezing drying or hot air drying and freeze drying or freezing drying, the dried lemon slices made through hot air drying, infiltration dewatering and freeze drying are shorter in drying time and higher in product quality.
