Abstract The invention relates to the field of plant extraction and in particular relates to an extraction method of fennel polysaccharide. According to the extraction method, fennels are pulped, and then a manner combining high-temperature ultrasonic extraction and enzyme extraction is adopted, so that plant cell walls can be damaged, the releasing of polysaccharides in cells is easy to realize, and the dissolution rate of the polysaccharides is improved. Embodiments prove that the extraction rate of the fennel polysaccharide is 4.62 percent to 5.31 percent, and the content of the polysaccharides in the fennel polysaccharide is 4.21 percent to 5.35 percent. The embodiment 3 is the optimal scheme.
