Abstract | The invention discloses a method for synthesizing 1,3-stearin-2-glyceryl monooleate through an enzyme method. High oleic acid vegetable oil and a stearic acid acyl donor are mixed at a certain substrate molar ratio. A certain amount of lipase is added within or without a solvent system. The reaction is carried out for 1-10 hours at 60-80 DEG C and a reaction product containing SOS is obtained. The method of the invention inhibits an acyl transfer side reaction by using the enzyme specificity, efficiency and by controlling the reaction conditions. The reaction conversion rate is very high, at the same time, the synthesis time is shortened. It is easy to control the whole process. The reaction conditions are mild, and the cost can be greatly reduced through the recovery and utilization of the enzyme. It is convenient for large scale industrialization popularization and the application potential is huge.
