Abstract | The invention provides to an improved Fuzhuan tea processing method and relates to the field of tea leaf processing. The improved Fuzhuan tea processing method is characterized by comprising the processing steps of pile fermentation, sealing moisture regaining, weighing, pressing, vacuum packaging, high-pressure sterilization, cooling shaping, unpacking, high-humidity mouldy spot appearing, aroma increasing drying and inspection packaging. Compared with traditional Fuzhuan tea processing, the improved Fuzhuan tea processing method has the advantages that by the mode of sealing moisture regaining, the purpose of softening tea leaves is achieved, and the uniformity of the moisture content of the tea leaves is effectively controlled; brick tea is quickly released from molds after being pressed, and thus the using quantity of the molds is reduced; the humidity of different mouldy spot appearing stages is controlled, so that golden spots inside brick tea grow more uniformly, the taste and quality of the tea leaves |
