Abstract The invention discloses a novel hand-torn golden filament dried meat slice producing method including the following steps: (1) taking fresh raw material meat, cutting into meat slices, then soaking with soda water, deoiling, then draining, putting in a steaming cabinet, steaming thoroughly, then putting in a drying oven, and drying; and putting the meat slices in a puffing reaction kettle, vacuumizing, injecting carbon dioxide, making the pressure in the reaction kettle reach 1.2-1.5 MPa, holding the pressure for 10-12 minutes, and reducing the pressure to atmospheric pressure within 2 minutes; (2) taking the puffed meat slices, adding white granulated sugar, eggs, a lemon jam and the like, retaining freshness and pickling, and then spreading and screening into slice-shaped dried meat slices; (3) baking the dried meat slices to the water content of 8-12%; (4) taking out the dried meat slice after baking, brushing the dried meat slice surfaces with honey, xylose and glycine, baking to discolor and boil, and then carrying out rolling loosening; and (5) after the dried meat slices are cooled to room temperature, packaging, and thus obtaining the product. The prepared dried meat slices have a shape of golden filaments in shape after being torn, are soft and tasty, are delicious in taste, and greatly improve the taste and grade of conventional dried meat slices.
