The invention pertains to an efficient and safer process for manufacturing scyllo-Inositol as compared to some other prior art methods. Specifically, the current invention pertains to a process for converting myo-inositol to scyllo¨Inositol using a bioconversion process. In some aspects, the invention provides a process for preparing scyllo-Inositol comprising the steps of: (a) subjecting myo-lnositol to a bioconversion process to produce scyllo-Inosose and scyllo-Inositol; degrading the scyllo-Inosose and lysing the cell mass; using boric acid and sodium hydroxide to produce scyllo-Inositol-diborate-disodium salt complex; hydrolyzing with sulfuric acid and water to produce crude scyllo-Inositol; and crystallizing the crude scyllo-Inositol to produce crystalline scyllo-Inositol. La présente invention a pour objet un procédé de fabrication de scyllo-inositol. Spécifiquement, la présente invention a pour objet un procédé de conversion de myo-inositol en scyllo-inositol à l'aide d'un procédé de bioconversion.
