Abstract The present invention relates to a composition and associated methods thereof for hydrolyzing lactose in a human in need thereof by oral administration having a lactose hydrolyzing amount of .beta.-galactosidase, an excipient, a nd less than about 10 wt% of a reducing sugar, wherein the composition undergoes a change in yellowness of about 45% or less after seven days at 40.degree.C/75% RII as determined by ASTM ~1925.
