海参体腔液提取物对南美白对虾自溶的抑制作用
目的:研究海参加工副产物海参体腔液提取物对南美白对虾虾靡自溶中蛋白质降解的抑制作用.方法:通过聚丙烯酰胺凝胶电泳(SDS-PAGE)对南美白对虾自溶中蛋白质的降解情况进行分析,并进一步利用SDS-PAGE和三氯乙酸(TCA)可溶性寡肽释放量指标分析海参体腔液及其提取物对南美白对虾自溶中蛋白质降解的影响.结果:南美白对虾自溶的适宜条件为pH 3.0、孵育温度50℃、孵育时间2 h.在此条件下,南美白对虾的肌球蛋白重链(200 kDa左右)和肌动蛋白(44.3 kDa左右)的条带灰度均有不同程度的降低,表明蛋白质发生降解.海参体腔液对南美白对虾自溶中蛋白质降解起到一定抑制作用,当海参体腔液提取物添...
