Abstract_FL | Food sterilization is one of the indispensable steps in food processing. This Paper reviewed the development of new sterilization technologies and equipments in food industry, which mainly introduced the development, characteristics and application of 5 new sterilization technologies, including ultra-high pressure sterilization, microwave sterilization, high-voltage pulsed electric field sterilization, radiation sterilization and pulse light sterilization. These new sterilization technologies, especially cold sterilization, can better preserve the quality and flavor of foods and ensure food safety. |
