This article summarized the composition, preparation and application of nanoemulsions, emphasis on the preparation of nanoemulsions with foodgrade emulsifiers (proteins, polysaccharides, etc.) to encapsulate, protect and deliver lipophilic functional components, such as β-Carotene, curcumin and vitamin E and other nutrients.
