烤烟类胡萝卜素及其降解产物与香气特性的关系研究
为了研究类胡萝卜素及其降解产物对烟叶香气特性的影响,以河南2011-2013年的165份烟叶样品为材料,采用逐步回归、偏相关分析和通径分析对烤烟类胡萝卜素及其降解产物与香气特性(香气质和香气量)的关系进行研究。结果表明:1β-大马酮和巨豆三烯酮2与香气质呈极显著正相关且正面影响较大,类胡萝卜素与香气量呈极显著正相关且正面影响较大。2通过逐步回归分析建立了香气特性指标与类胡萝卜素及其降解产物的最优回归方程,可以利用回归方程来预测香气指标。...

Notes | In order to study the effect of carotenoid and its degradation products on tobacco aroma characteristics of flue-cured tobacco, a total of 65 samples in Henan from 2011 to 2013 were selected as tested materials, and the relationship of carotenoid and its degradation products with aroma characteristics( the quality and amount of aroma) of flue-cured tobacco were studied by stepwise regression, partial correlation a- nalysis and path analysis. The results showed that: (i) the extremely significant correlation existed between β-damaseenone, megastig- matrienone B and the quality of aroma; The extremely significant correlation existed between carotenoid and the amount of aroma. (ii) Opti- mal regression equation of carotenoid and its degradation products with aroma characteristic index were analyzed and established by the meth- od of stepwise regression, and aroma index could be predicted by the equation.
