烤烟类胡萝卜素及其降解产物与香气特性的关系研究

Notes In order to study the effect of carotenoid and its degradation products on tobacco aroma characteristics of flue-cured tobacco, a total of 65 samples in Henan from 2011 to 2013 were selected as tested materials, and the relationship of carotenoid and its degradation products with aroma characteristics( the quality and amount of aroma) of flue-cured tobacco were studied by stepwise regression, partial correlation a- nalysis and path analysis. The results showed that: (i) the extremely significant correlation existed between β-damaseenone, megastig- matrienone B and the quality of aroma; The extremely significant correlation existed between carotenoid and the amount of aroma. (ii) Opti- mal regression equation of carotenoid and its degradation products with aroma characteristic index were analyzed and established by the meth- od of stepwise regression, and aroma index could be predicted by the equation.
