氨基酸总量及组份与云岭永川秀芽茶品质级别的关系研究

采用氨基酸自动分析仪测定法对不同级别云岭永川秀芽茶氨基酸总量及组份进行测定,并对其与云岭永川秀芽茶品质级别的关系进行了分析研究。结果表明:云岭永川秀芽茶氨基酸总量越少其品质级别越低。分析鉴定出的23种氨基酸组份中只有功能氨基酸——γ氨基丁酸1种的含量越低,其品质级别反而越高;而分析鉴定出的7种人体必需氨基酸以及8种人体所需的非必需氨基酸中的4种含量都随品质级别的降低而减少;特征氨基酸——茶氨酸,以极品中含量最高,珍品次之,特级最少。...
