Abstract [Sixty rabbits, derived from Vienna Blue (B) and Burgundy Fawn (F) sire genetic origin (SGO), were utilized. The maternal genetic origin was a mixture of crosses of several medium-large size breeds, red-eye breeds excluded. All the rabbits were born from January to April and weaned at 46 +- 5 d. The rabbits were housed in the same rabbitry, indoor, in a certified organic farm (AIAB). The stock density was 8 rabbits/square m and cages were provided with plastic slats floor. Diet were given ad libitum (13.3% CP, 4.0% EE, 14.5% cellulose and 16.5 MJ GE/kg). Feed intake was recorded weekly and LW was determined at weaning and at slaughtering. Slaughtering (n = 58) was carried out at 2.8 +- 0.13 kg average live weight and anyway after 16 weeks of age. Slaughtering tares and yields, composition of reference carcasses, meat/bone ratio and traits of the hind leg were recorded. ANOVA was performed including the SGO (B, F), the slaughter season and their interaction as fixed effects. The live performances of B and F rabbits did not differ; only feed conversion index of OGP F subjects was better compared to the one of SGO B (4.07 vs 4.94; P0.10). The slaughter yield did not show significant differences related to the two SGOs. Rabbits reared in Summer exhibited a lower incidence of the full gastrointestinal tract, but a higher percentage of skin than rabbits reared at the previous season, resulting in higher dressing out percentage; The rabbits reared in Summer showed higher hind leg meat/bone ratio (5.2 vs 4.7; P0.05). Tibia of rabbits B was thinner compared to the one of rabbits F (0.65 vs 0.74 cm diameter; P0.05).] Si utilizzarono 60 conigli, di origine genetica paterna (OGP) Blu di Vienna (B) e Fulvo di Borgogna (F). L´origine genetica materna era costituita da una popolazione derivata da incroci di razze di taglia media-grande, con l´esclusione di razze a occhi rossi. Il periodo di allevamento andò da gennaio a luglio e l´età media di svezzamento fu di 46 +- 5 giorni. Gli animali furono allevati nello stesso capannone presso un´azienda biologica certificata (AIAB). La densità di allevamento fu di 8 conigli/m quadrato e le gabbie erano provviste di fondo in listelli di plastica. Le diete furono somministrate ad libitum (13,3% PG, 4,0% EE, 14,5% cellulosa grezza e 16.5 MJ EL/kg). Organic rabbit production (ORP) must follow the guidelines for organic livestock system (EC regulation 1804/1999) but they give very few indications for rabbit rearing. In Italy, two organisms of certification (ICEA, AIAB) provide respectively the control system and the guidelines for the rabbit reared under organic system. Regarding to the breed, only pure breeds and their crosses of first generation must be used; the red-eyes breeds are forbidden. The choice of the breed must consider mainly their resistance to disease, their rusticity and slow growth. The latest rule is needed because of the rabbits must be slaughtered when reaching the 14th wk of age. In Italy, the ORP is just developing so, the permitted breeds are not yet selected for carcass and meat quality. Among the adoptable breeds, Vienna Blue and Burgundy Fawn are those the more profitable for the ORP. The aim of this study was to compare the live performance and the carcass yield of rabbits derived from two sire genetic origins, Vienna Blue and Burgundy Fawn, reared in organic system and under different rearing season.
